Where it grows: Rhubarb grows well in colder climates, requiring 7 to 9 weeks below 3˚C. Rhubarb requires well draining soil as its roots rot if kept too wet.
How to identify: A perennial that is raised for food, Canada Red Rhubarb have large crinkled leaves that remain green throughout the season. When fully grown the stalks are enormous and red and the plant produces bold spikes of white flowers.
The Chinese utilized the powdered root for medicinal purposes. Its use extended across Europe and by the late 1700s, the stems had started to be used in cooking.
Rhubarb was introduced to the Blackfoot people in the early 1900’s, along with other contemporary hybrid vegetables, and is now widely produced in Canada. It thrives in our moderate environment and doesn’t mind the country’s lengthy, bitter winters.
